Vegan: Juicy ‘Beef-Filled’ Peppers

A mouthwatering recipe of a beef-filled stuffed peppers from the book Mighty Spice has been tempting me for quite a while now. However, wanted to try it with Soya Protein Mince instead. I often use soya mince as a substitute for minced beef. I’d like to encourage you to try it too, and here’s why:

  1. It’s better for you ( No fat )
  2. It’s better for the cows !
  3. It doesn’t have those off-putting gristle-y bits
  4. It’s easier to cook
  5. It’s quicker to cook
  6. Tastes the same!
  7. You’ll feel lighter after eating this than beef

INGREDIENTS:

( Serves 4)

  • 100g soya mince protein ( soaked in 300ml room temperature water, until plumped, 10 mins)
  • 1 large onion, finely chopped
  • 2 garlic cloves, finely chopped
  • 1 tsp ground cumin
  • 1/4 tsp ground cloves
  • 1 tsp chilli ( flakes or chopped )
  • 25g  roughly chopped almonds ( or almond flakes)
  • 4 tomatoes finely chopped
  • 1 handful of coriander finely chopped
  • 2 red peppers, halved lengthways and deseeded
  • Salt & pepper
  • Olive oil

( Optional ) : SAUCE -Not vegan

  • 50g pecan nuts
  • 150 ml soured cream

METHOD:

  1. Preheat the oven to 190C/ 375F/ Gas 5. Heat the oil in a large frying pan, over a medium heat, then add the onion and cook, stirring occasionally for 3-4 mins. Add the garlic and cook for another 3-4 mins. 
  2. Add the soaked soya mince, cumin powder, cloves powder, chilli, almonds, tomatoes. Add a touch of water and oil if needed. Cook for 8-10 mins. Until the tomatoes are softened. The sauce should be thick and no excess juice/water in the pan. Throw in the chopped coriander and mix well.
  3. Spoon the cooked mixture into the pepper halves, drizzle with a little olive oil and bake in the preheated oven for 20-25 mins, or until peppers are soft and started to turn golden brown.

For the sauce :

  1. Blend the pecans , soured cream and a splash of water , until completely smooth.

    • Really? You think the photos are good? Excellent! I must be getting the knack of this DSLR cameras then 😉 . I have made this food twice and have photographed it twice. Just couldn’t get a good shot of it.

      • I think the photo’s are great. I am still waiting for the memory card I ordered to arrive so I can use my new camera. Can’t wait. I really see the difference from the previous photo’s in your post.

          • Well I am easing my way into the world of the real camera. I bought a used Canon Rebel EOS 400D with 18-55 lens, I bought it from another food blogger who upgraded. I leaned toward Nikon but wanted to see how I did with photography before I spend the big bucks. I haven’t used it yet, ordered the memory card and haven’t received yet, Once I get the card I will do a post with photo’s using my camera you will have to tell me what you think.

  3. Your dolmehs look exquisite! I had never seen ‘soya protein mince’ before. You gave me 7 good reason to try it! I like to make dolmeh’e bademjan in the summer when good eggplants are in the market… but with beef. 😀 )))

    • Dolmeh bademjan is the best Fae! I think aubergine, when cooked the right way, is one of the tastiest things ever. Poor man’s caviar indeed. Looking forward to your post 🙂
